WHere is an easy version of a drink featured on a new menu. It's a large-volume premix that is packed with tastes of a Christmas time, making it excellent for your holiday party. Save the extra cordial you can use for morning drinks, puddings, or for more rounds of the drink.
Bikini Recipe
Serves 10 servings
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Put the listed items into a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, remove from the heat allowing it to reach room temperature completely. Pour into an clean bottle, cap it and store chilled, it can be stored for up to one month.
For the Cocktail Base: Mix the specified liquids into a large bottle, leave to sit for 60 minutes, then pass it through best through cheesecloth, making it completely strained.
When ready to serve: Add 85ml from the premix into a stirring glass packed with ice, gently stirring gently for about 60 seconds until cold. Filter to a cold coupe glass or similar, garnish with some cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
